This refurbished dining area is designed to a high standard, accommodating over 80 guests and serving a variety of menus daily to hotel guests, locals, and tourists.<\/p>\n<p>Under the direction of Head Chef Mark Williams, the menu features classic dishes such as Ham Hock Terrine with Piccalilli, Roasted Cauliflower Cous Cous, and Grilled Goats Cheese topped with Pickled Heritage Beetroot and Micro Herbs from the hotel\u2019s herb garden.<\/p>\n<p>Main courses highlight country favorites like Posh Fish and Chips, Peas with Warm Tartare Sauce, and Slow Roasted Conway Valley Lamb Shank served with Buttery Mash, Roasted Carrot, and Rich Rosemary Jus.<\/p>\n<p>Desserts, crafted by the on-site pastry chef, include popular options like Red Velvet Beetroot Cake and Lemon Posset with Fruit of the Forest Compote and Meringue. Sundays will feature a special Roast Dinner with locally sourced lamb and beef, dubbed the \u2018Caer Rhun Roast\u2019, available weekly from 12-7pm.<\/p>\n<p>Afternoon Tea is served daily and includes finger sandwiches and handmade pastries. The restaurant prides itself on sustainably sourced produce, collaborating with local suppliers for meat, vegetables, and ice cream while also utilizing on-site herbs. The tea selection features the hotel\u2019s own blend, and the salt comes from Anglesey. The venue\u2019s heating is powered by renewable energy from a newly installed Biomass facility.<\/p>\n<p>Operations Director Chris Bateson expressed excitement about launching the restaurant, noting the team\u2019s efforts to transform a previously unused space into a beautiful brasserie with a curated menu of high-quality dishes, aiming to offer something unique to the Eryri area.<\/p>\n<p>The restaurant has already been operating for four weeks exclusively for hotel guests and will soon accept bookings from the public, with plans to expand its offerings. Caer Rhun Hall, a Grade-II listed building acquired by Tokyo Industries in 2021, boasts 32 bedrooms, expansive 18-acre grounds, a private hire lodge, a refurbished conference center, and plans for a spa opening in late 2025.<\/p>\n<p>The venue also hosts weddings and offers exclusive use year-round, with various wedding packages and bespoke menus available. The restaurant operates daily, offering a morning coffee menu from 10 am to 12 pm, light lunches and Afternoon Tea from 12 pm to 5 pm, and a full \u00e0 la carte menu from 6 pm. A special Sunday Menu is served weekly from 12 pm to 7 pm, along with a children\u2019s menu featuring dishes like Cheesy Garlic Bread and Tomato Pasta.<\/p>\n<p>A festive menu will launch on November 1st.
