Renowned for its authentic Saigon street food lunch menu, including the famous banh mi, the new K\u00eau Borough will offer an expanded menu with a greater selection of noodles and rice dishes, along with extended hours for late-night dining.<\/p>\n<p>Hieu Bui, the acclaimed restaurateur behind Vietnamese Kitchen, has been sharing traditional Vietnamese cuisine with Londoners for over 20 years. With three successful brands across six locations, including K\u00eau, C\u00e2y Tre, and Viet Grill, Bui has built a dedicated following. The new K\u00eau will be located on Borough High Street, nestled between London Bridge and Borough Market, one of London\u2019s iconic food hubs.<\/p>\n<p>Taking inspiration from Vietnam\u2019s late-night noodle bars, the new establishment will feature K\u00eau\u2019s hallmark lunch offerings along with exciting new evening and late-night dishes. Hand-pulled noodles, originating from Saigon\u2019s Chinatown, will be complemented by H\u1ee7 Ti\u1ebfu Nam Vang, a dish with roots from Chinese immigrants in Cambodia and later refined in Saigon, showcasing Vietnam\u2019s vibrant street food heritage.<\/p>\n<p>The venue will present a fresh redesign for the K\u00eau brand, influenced by the aesthetics of ancient Saigon, incorporating traditional colors and designs characteristic of the region. <\/p>\n<p>Dining will embrace a traditional noodle-house vibe with tables and stools, providing a cozy yet authentic atmosphere. Additional seating available downstairs will include a long table for up to 12 diners, offering a more intimate setting away from the busy upstairs area.
