Terra Mare, a restaurant dedicated to showcasing the “authentic flavours” of Puglia, Southern Italy, officially opened its doors today (11 October) in Cardiff. Located in a former cocktail bar on High Street, just steps from Cardiff Castle, Terra Mare has reimagined the space to include a dining room with fifty covers, additional bar seating, and an outdoor terrace.
The main dining area features dark green paneling that creates a cozy atmosphere, while booth seating with soft lighting enhances the “intimate” dining experience. The decor reflects Mediterranean influences, with bespoke details in the bar and wine display cabinets.
At the core of Terra Mare is a menu rooted in tradition, highlighting the culinary heritage of Puglia, including daily handmade pastas, a signature element of chef Francesco Germinario’s creations. Germinario blends his Puglian roots with his experience in top London kitchens, combining tradition with innovation to present authentic Italian flavors.
Terra Mare’s menu offers a range of dishes from “cicchetti” and antipasti to “primi piatti,” “secondi piatti,” and desserts. Signature dishes include “Colombaccio alla cacciatora” (wood pigeon breast and leg with squash, burnt leek, and shaved cacao), “Zuppa di pesce alla gallipolina” (cuttlefish, mussel, and langoustine stew with sea herbs and croutons), Aubergine Parmigiana with roasted tomatoes, mozzarella, and spenwood, and “Polpo alla griglia” (grilled octopus with nduja and cannellini beans).
In the bar area, guests can enjoy a selection of cocktails, draught beers, and premium wines, accompanied by a concise bar snacks menu featuring items like “Fritto Misto,” “Bruschetta,” and “Ragu Orecchiette.”
Daf Andrews, co-founder of A&M Hospitality Group, expressed his excitement about bringing the essence of Puglia to Cardiff. “Whether people are booking in for the full seven-course experience or just stopping by for a quick drink and a bite, we aim to have something for everyone.”
